The culinary team go to great lengths to make sure that their fruit, vegetables and meat are organic and locally sourced, and you have four different dining venues to choose from. Casero is the main restaurant, offering traditional Mexican cuisine, while Cielomar is a rooftop bar that serves wood-fired pizzas, seafood and flame-grilled steaks, and Nido is a ceviche and sushi joint housed within a spectacular upturned nest structure surrounded by water. The Nidito beach and poolside bar is Nido’s little sister, serving cocktails and an enticing array of light bites, including incredible fish tacos.

Designed by mexican architect miguel ángel aragonés, Viceroy Los Cabos doesn’t look quite like anything we’ve seen before, with its futuristic all-white architecture, mirrored pools and nest-like lattice structures. What’s more, there is some serious substance to back up the style, including luxurious lig ht-flooded accommodation, zingy mexican haute cuisine and superb fitness and wellness facilities, all set along a beautiful golden beach.
